The use of meringue powder allows us to skip the traditional but somewhat tricky step of heating the raw egg whites with sugar over a double boiler to cook them.

Meringue powder is powdered egg whites, already cooked and pasteurized no need to heat it. You can add the powder to water and then go straight to whipping the meringue, then gradually add in a third of the powdered sugar and whip until it is glossy, then alternate the butter and remainder of sugar until it’s all combined. Easy peasy lemon squeezy! Easy swiss meringue buttercream is achieved.
