Make the Chocolate Malt Ball Brownies
To whip up a batch of these chocolate malt ball brownies, start by preheating your oven to 400 degrees. Then crush up some chocolate malt balls and set them aside for later.
To make the batter, melt butter, sugar, and cocoa powder together over a double boiler. This can also be done in the microwave in 30-second increments. This recipe has a lot of cocoa powder. After all of the chocolatey goodness is stirred together, add the eggs one at a time and then some vanilla and espresso powder or instant coffee. Another awesome thing about this recipe- no mixer needed. You could certainly use one but I didn’t bother with mine.
After the eggs and vanilla are incorporated, it’s time for the flour. Whisk together flour, malted milk powder, and salt. Then add the mixture to the cocoa powder egg mixture. Pour half of the batter into a generously greased 13″x9″ pan. Then sprinkle the chocolate malt ball pieces over the batter and pour the rest of the batter over the pieces. Bake the brownies for 30 minutes in a 400° oven.
Make the Chocolate Malt Ball Frosting
Now for the chocolate on chocolate. While the brownies were baking, I made some chocolate ganache by pouring warm cream over chocolate chips. Stirred the mixture until smooth then added some vanilla and more malted milk powder. This icing is so good. My little guy was helping me with this part and we seriously fought over who was gonna get to lick the whisk. Cover in the ganache and pop it in the fridge until the brownies are baked and completely cooled. This frosting would also be awesome paired with my chocolate cake.
Frost the cooled brownies with the ganache. If you can wait, pop them back in the fridge or the freezer for a bit. I won’t judge if you can’t wait but these are way easier to cut when really cold. They are really rich so I sliced the into triangles and topped each one with a chocolate malt ball.
I recommend making these from scratch but… if you don’t feel like cracking this many eggs and melting the butter and all that stuff you can use your favorite box brownie mix for the brownie base. I know sometimes you just need your chocolate fix faster. Just make sure it is a family size mix for a 13″x9″ pan. Follow the box instructions to mix the batter but to boost the flavor use cold coffee instead of water, an extra egg, and stir in a half cup of malted milk powder.
