This simple blueberry syrup is perfect with fluffy pancakes, spongy waffles or buttery biscuits. With only a few ingredients and 20 minutes to make you are a short step away from elevating your breakfast fare with this delicious fruit syrup.
I mentioned in my recipe for The Best Peach Ice Cream that we visited a local farm shop with fresh fruit and veggies. These beautiful blueberries came home with us. My husband loves blueberries so I had to make so I had to make something special with them. This recipe is sooo simple-no lie.
First clean your berries well and remove any stems and baddies. Then add them to a medium saucepan with sugar and water. Once the sugar is dissolved, mix some cornstarch with a bit of water then stir into the sauce. Simmer them for about 15 minutes. Use a whisk to stir and smash the berries to release their juices. It is done when it coats the back of a spoon and doesn’t come back together when you run a finger through it.
Remove from the heat and add the juice of half a lemon and a teaspoon of vanilla to the blueberry syrup. At this point, I strained it because I like it smooth. However, this is just my preference. If you want texture and to see the berry pieces, skip the straining.
We enjoyed this homemade blueberry syrup immediately with fluffy pancakes. I stored the leftovers in the fridge and we found many other uses for it. Like I said it goes well with biscuits, waffles, and ice cream. It’s also great for cocktails or Italian sodas.
