These brookie cupcakes are a mashup of soft chocolate brownie and chewy chocolate chip cookie topped with a dollop of cream cheese icing, sprinkles, and a mini candy bar. A fun festive treat for your next celebration!

To make the brookie cupcakes, first, preheat your oven to 350° and line a cupcake pan with cupcake liners.
Make the cookie dough
For the cookie dough, you can use some store-bought chocolate chip cookie dough or whip up a small batch of the recipe below. The trick to keeping the cookie from being overdone is to chill the dough really well. After its mixed form, it into a log or flat shape and wrap in plastic and put it in the fridge or freezer for several hours. I formed mine into a flat messy rectangle. Just drop the dough onto some plastic wrap and spread into an even layer and fold the plastic wrap up over it. Then place in fridge or freezer. When it was cold enough I cut it into 24 squares. Then dropped one square into each cupcake liner and topped it with brownie batter.
Make the brownie batter
For the brownie, you can, of course, use a box mix or whip up the recipe below. If using a boxed mix bump up the taste a bit by adding a teaspoon of vanilla and using cold coffee instead of water. The recipe below is super easy and delicious though. That’s the beauty of these. They are easy from scratch but can be even easier.
Once the brownie batter is mixed, evenly divide among the cupcake liners that are already filled with that bit of cookie dough. I used an ice cream scoop to get an even amount in each. Cover the cookie dough with the brownie batter. You may have to spread it a bit.
Now bake in a 350° oven for 20-25 minutes. You don’t want to overbake these. The will turn very hard. Trust me I’ve had it happen. So no longer than 25 minutes. I just watched them towards the end to see if the middle had risen all the way. It took about 23 minutes in my oven. Let them cool completely.
Decorate the Brookie Cupcakes
Now it’s time to decorate! My favorite part. I love taking simple treats and making them a little bit more special. I piped a dollop of cream cheese icing on top of each Brookie cupcake. The cream cheese icing recipe is from my Red Velvet Cake with Cream Cheese Frosting. It’s delicious. Top with some rainbow sprinkles and a pink chocolate bar. You can totally use any color sprinkles and chocolate bar so these match your party theme or what you have on hand. Display them on a cupcake tower or cake stand to make even more of a statement.
I used this adorable mini candy bar mold I found on Amazon to make the tiny pink chocolate bars. I melted about a cup of pink candy melts in the microwave for about a minute. Stirred them really well so they were smooth. Then poured them into the mold and used a spatula to smooth them out and scrape any excess. Then let them dry and popped them out of the mold.
