It’s as American as apple pie! For the 4th of July, I really wanted to make a cupcake but not the same old, same old layered batter in red, white and blue. While that’s really cute, I want to serve something a little different. This unique cupcake has all the awesomeness of an apple pie and a cupcake in a delicious little package.
I started with a simple store-bought pie crust. You can certainly make your own. Sometimes a girl’s gotta take a shortcut, though. Using a cookie cutter, I simply cut discs of pie crust to fit inside a standard cupcake pan. Then I lined the pan with the pie crust discs and partially baked them. I know you are asking why not just fill it with all the stuff and be done. Partially baking the crust before filling it, ensures that it will be nice and crispy in the end. My favorite part of a pie is the crispy, flakey crust.
For some decorations, I cut some stars from the left over pie crust, brushed them with a little milk and sprinkled them with sugar and baked them until golden about 8-10 minutes.
While the crust was cooking, I peeled and diced up a few apples into small pieces so they would fit nicely inside the cupcake. Then I cooked them with some butter, brown sugar, a bit of flour and cinnamon until they were just slightly tender and caramelized about 8 minutes.
For the cake part, I mixed up some vanilla cake batter. I just used my vanilla cake recipe but reduced the quantities and used all milk. A cake mix could be substituted but the whole box is a bit more than is needed.
For the magical pie cupcake combo, I filled the par-baked pie crusts with about 2 tablespoons of apples and then topped that with about 2 tablespoons of cake batter spreading and lightly pushing it down to make sure it gets completely covers the apples.
Mmmm…This is a total lick the spoon and bowl kind of recipe.
I baked those babies up in a 375° oven for about 20 minutes.
Now for the most fun part of all, eating them. We tried them several ways, warm with a mini scoop of vanilla ice cream and cold with a dollop of whipped cream.
For the 4th of July, I plan to serve them topped with vanilla whipped cream fluff and a flag. Go pick up some apples to get your apple pie cupcake on and have a happy Fourth of July!
